Chinese cuisine is an absolute bounty in terms of vegetarian dishes. Chinese food is among the richest in the world in terms of usage and variety of veggies and mushrooms. And there are endless types and ways to cook tofu, which has been a Chinese staple for many centuries. Seasonings, including fragrant aromatics, tantalizing spices, and sauces with deep umami, make veggie dishes even tastier than most meat dishes. It’s hard to choose favorites among the hundreds of vegetarian recipes I’ve cooked, but you can’t go wrong with Homestyle Tofu, Napa Cabbage with Glass Noodles, and Vegetable Lo Mein.
